You are not currently logged in. Stewing over a recipe? Baffled by an ingredient? Q: As a vegetarian, I am quite happy to munch on veggie sosaties while others tuck into their boerie round the braai. I know that one can make gelatine-free marshmallows using agar-agar. Do you have a good recipe — and will they still toast nicely in the fire? Also, when it comes to agar-agar, can one simply use that instead when recipes call for gelatine? How would the quantities change? Agar-agar, a gum extracted from seaweed, is a vegetarian alternative . It was discovered by the Japanese and, if it sounds familiar, perhaps it is because it’s the stuff used in petri dishes! It is good for setting jellies and other sweets and desserts and is used to thicken soups and sauces. Powdered agar-agar can be substituted for the same quantity of powdered gelatine in a recipe. If you get the agar-agar flakes, substitute a tablespoon for every teaspoon of agar-agar powder....
